My friend Linda's Seat of the Pants Crumble
(she served this the other night after a fabulous bouillabaise)
 
Preheat oven to 350. Spray 8X8 baking pan with butter spray or rub on some real butter. Peel five ripe or relatively ripe peaches or apricots.  Core and slice into a bowl.  Spoon on a 13.5 oz jar of Polander sugar free apricot preserves (or sugar free peach if you can get it, etc.)  with a heavy spash ( 3 tblsp?) Ameratto or other liquor. Mix well.  Pour into prepared pan. Top with half a 14 oz bag (or there abouts) Archway ginger snaps cookies crushed.  Bake in in the oven for half an hour until bubbly and cookies are getting toasted. Serves 4 generously or six if you offer vanilla ice cream or fresh whipped cream topping.  Poof! Optional -- throw on some slivered almonds during the inital bake, particularly if you have used Ameretto since that'salmond based.
